In our former house up in the hills between Foligno and Spello, we had a large terraced vegetable garden. There were four of us in the family at home so the bountiful crops went to good daily use. In our new house above on the Genius Loci property, we have dedicated less…but prime space in full sun and with plentiful well water to our vegetable garden. On the Inn property we have 20 producing fruit trees and have planted another 10, too young to be producing much yet.

Unless we are preserving or cooking certain dishes which need large quantities (think pappa al pomodoro or roast stuffed tomatoes, or rice-stuffed tomatoes or a tomato rice casserole), we prefer to pick each morning only as much as we can use for our guests and for ourselves for the day!
